- A good handfull of cashew pieces and pumpkins seeds
- Two handfulls of sunflower seeds
- This mix is great. We chuck it on everything from salads and pasta to bakes and stir fries. Or they are equally good as a snack. The toasted creamy flavour goes with just about everything and adds in an extra flourish of protein and good fats.
You don’t need to be overly concerned about the quantities and can substitute pine nuts for the cashews too.
Preheat a dry skillet pan over a medium heat and add in the cashews. Allow to brown for a minute or two, turning regularly then add the sunflower seeds. Again, allow for a further minute or two and add the pumpkin seeds. After a further minute turn down the heat to low and continue to regularly stir the seeds until they have a golden colour and are evenly toasted.
Remove from the heat and allow to cool before using.
Store in an air tight container, such as a Kilner jar, in the cupboard.
